Easy Gluten Free Pumpkin Pie Recipe

Gluten-Free Pumpkin Pie Recipe
Easy, delicious gluten-free pumpkin pie.

This will be one of our little secrets, okay? Just make this impossible pumpkin pie recipe and serve it with a smile. No apologies. No caveats. No waffling or waggling. You don't have to label it vegan. Or gluten-free. Or lactose-free. Which it is. Because no one will ever know. It tastes that good. And you'll score serious points with your vegan guests. You'll be a hero to gluten-free pie lovers. A goddess to egg-free pumpkin-cravers. A rock star to dairy-free angels.

My secret? It's in the details.

First- no tofu (yes, Babycakes, my pumpkin pie is soy-free so you won't have to put up with your cousin's tofu jokes on Thanksgiving).

Second- it's also rice-free. No gritty rice flour (which, come to think of it, I am hardly using any more). No cornstarch (for those of you avoiding corn). In a sweet little nutshell, it's very food allergy friendly.

Even your Aunt Sadie who is allergic to Wyoming might be able to eat this. Unless she's allergic to pumpkin.

Then you're screwed.

My secret ingredient? My favorite grain of late. Buckwheat. I thank my lucky stars every night that I can eat buckwheat, not only because it's deeply familiar, ingrained as it is in my semi-Ashkenazi bones (while the Scot-Irish half of me pines for Guinness), it's a cereal-free "grain" with a soft, sweet nutty taste and a higher protein content than many other gluten-free flours. And it is drop-dead sexy in baking (have you tried my Buckwheat Chocolate Chip Cookies? My Pumpkin Raisin Cake?).

Buckwheat? In a pumpkin pie? you ask.

Affirmative. You see, this is a crustless pumpkin pie- a close relative of my crustless quiches (though they contain eggs which helps beyond imagining- but vegans, keep the faith, because I'm also working on an eggless quiche slash kugel). As impossible as it seems (okay, allow me, please, a corny nod to the old Bisquick trick) the buckwheat flour helps create a tender and barely discernible crust, which- for a quasi-baker like me is a high-fiving relief because there is nothing I have less patience for than wrangling with fall-apart-when-you-sneeze gluten-free pie crust dough. Well.

That's not entirely true.

I have even less patience for the fear-spiking sensationalism media corporations serve up as news when it is anything but. It's enough to give any sensitive soul severe schpilkis.

Which is why I disconnected my cable TV. One hundred dollars a month to get heartburn? I don't think so.

Copycat Recipe for Bang Bang Shrimp

Is there anyone out there who does not love Bonefish Grills Bang Bang Shrimp? I cannot imagine that there is. If you like shrimp and you like a bit of a kick you are sure to think this is one of best seafood dishes ever. I have tried to recreate their famous Bang Bang shrimp several times, have researched every recipe out there and have made some successful and some unsuccessful prototypes. This time, according to my dining partner, I came as close as possible to recreating an exact replica without it actually being the read deal. The secret to making it really authentic is deep frying the shrimp as opposed to pan frying.  I have pan fried on each previous attempt, but this time I used to handy dandy Cuisinart deep fryer.  A huge difference! Try it, and let me know what you think!

Because the shrimp will cook so quickly, once you get them in the pan, you want to have the sauce ready and standing by to pour over the freshly fried shrimp. In a mixing bowl combine 1/2 cup mayonnaise, a tablespoon or so of horseradish, 1/4 cup sweet Asian chili sauce and a few tablespoons of hot Asian chili sauce or Srirachi (if you want to start out a bit more cautious, add 1 tablespoon at a time of the hot sauce and taste. Add more until its a spicy as you like it). Thats it! Combine well and set aside until the shrimp is ready.

I purchased one pound of raw, shell-on USA shrimp and cleaned, de-veined and removed the shell at home. Next step is to toss the shrimp in some cornstarch which, when fried, will give the shrimp a nice crisp coating without it being too heavy. Cook the shrimp in the deep fryer for about 3 minutes total. Place the shrimp in a large mixing bowl while they are still hot and pour over the Bang Bang sauce. Toss well to coat, adding more sauce if necessary and tumble out onto a bed of crispy shredded iceberg lettuce. Top with a sprinkling of green onions and chopped fresh cilantro.

Pinch Coriander Seeds
3 Inch Fresh Ginger and 2 Garlic Cloves (Ground together with a little water into a paste)
Salt and Pepper (optional)
Pinch Dried Methi/Fenugreek Leaves
Pinch Crushed Dried Curry Leaves

Note...I use chicken on the bone because it gives the curry a lot more flavour, you can however use chicken breast pieces if you like.

Getting started on Jeenas Coconut Chicken Curry Recipe..

In a small pan boil you 3 small carrots, celeriac and leek until soft. Drain vegetables and keep the water you strain off them.

Blend the vegetables up in a food processor to form a very thick soup texture paste, add some of the water your saved if they need loosening up.

Leave to the side until later.

(As an alternative you can use some of my butternut squash soup recipe as a base, it works very well with this recipe)

Fry your 3 small onions in a large pan with some olive oil for a few minutes on a medium heat, be generous with the oil.

Add your skinless chicken peices to the onions and cook until they are white all over.

Add your fennel, cumin, coriander seeds and cardamon pods cook for a minute stiring the seeds around. Add your garlic and ginger paste, stir well.

Add your turmeric powder stir well then add your chillis.

If needed drizzle a little more oil in the pan.

Now add your blended vegetable base mix you cooked earlier. Add your coriander, and cumin powders.

Then add your dried curry leaves and dried methi/fenugreek leaves. Stir well cover with a lid then leave to simmer for 20 minutes.

After 20 minutes simmering add your garam masala with a little oil and stir well, leave for another 20 minutes simmering.

After 40 minutes your chicken should be cooked through (check if chicken is cooked by checking inside the bone with a fork, if it is still pink or bloody you need to return it too the pan to cook for longer).

Remove all the chicken from the pan onto a plate with two forks remove all the chicken meat off the bones.

Turn down the heat on your large pan now.

Add a little salt and pepper here if you like.

In a small pan fry your shallots until golden brown.

Add your coconut and cook for a minute stiring always. Take off the heat and pour into your large pan of chicken curry sauce.

Put your chicken back into the pan of coconut curry, stir well.

Sprinkle with fresh coriander leaves and cook for a minute or two.

Your coconut chicken curry recipe is now ready to eat.
