Special noodles

Special noodles


Ingredients
  • Egg noodles 1 packet boiled for 3 minutes
  • Chicken breast 1 thinly sliced
  • Salt ½ tsp
  • White pepper ½ tsp
  • Soya sauce 1 tbsp
  • Corn flour 1 tbsp
  • Oil ¼ cup
  • Crushed garlic 1 tbsp
  • White pepper ½ tsp
  • Soya sauce 1 tbsp
  • Sugar 1 tsp
  • Corn flour 1 tsp
  • Green onion leaves ½ cup 1 inch piece
  • Carrot 1 thinly sliced
  • Capsicum 1 thinly sliced
  • Cabbage 1 cup thinly sliced
  • Chicken stock 1 cup
Method
  • Marinate chicken breast with salt, white pepper, soya sauce and corn flour for 10 minutes.Heat oil in a wok add crushed garlic and fry till slightly brown.
  • Add marinated chicken and stir fry for 2 to 3 minutes.Add the chicken stock and cook till it begins to boil.Add salt, white pepper, sugar, soya sauce, add vegetables.
  • Cook till the vegetables are tender, thicken the stock with a corn flour paste add spring onion leaves, mix well.
To serve
  • In a platter the spread boiled noodles, top with prepared gravy, serve immediately.

Moong Dal Murukku SanKranthi Pindi Vantalu Special

Festives are without sweets and savories. So for this bhogi I prepared these Moong Dal Murukku. Murukku is a crispy munchy and pretty famous snack of South Indian during festivals. 


I used Moong Dal and Rice Flour to make these awesome Murukku.





Ingredients:


Rice Flour - 3 cups
Moong Dal - 1/2 cup
Red chilli powder - 1 tsp or As Required
Vamu - 1 tsp
Salt As Required
Oil - 2 tsps
Oil for deep frying




Preparation

  • Boil moong dal with water in a pressure cooker until it is cooked.
  • Take this boiled dal along with water into a grinder and grind till smooth.
  • In a bowl take rice powder, chilli powder, salt,vamu, 2 tsps of oil and above grinded paste and mix well till it forms a  smooth dough.
  • Add little warm water if it gets too hard.
  • Fill the dough in a murukku press and press into murukku shape on a flat board.
  • Heat oil in a vessel and fry the murukku on a medium flame till they turn golden color.
  • Store them in air tight container upon cooling.

Special Satrangi Chicken


Ingredients
  • 1/2 Kg Boneless Chicken julienned
  • 1 large Capsicum julienned
  • 1 Tbsp or 6 No. Black Olives stoned & sliced thinly
  • 2 Tbsp or 12 No. Green Olives, stoned & sliced thinly
  • 200g Cottage Cheese, cubed
  • 4 Tbsp Oil
  • 1 tbsp cashew nuts
  • 4 Tbsp Butter
  • 1 Tbsp Green Chilies Paste, heaped
  • 1 Tbsp Ginger Garlic Paste, heaped
  • 1 Tsp Salt, leveled
  • 1 Tsp Crushed Black Pepper, heaped
  • 4 Tbsp Yoghurt, whipped
  • 6 Tbsp Cream, whipped (150 ml or 3/4th of a packet)
Method
  • Heat Oil & Butter together, Sauté Ginger Garlic Paste, Add Chicken.Stir fry for 5 minutes till its color changes to white (cooked state), Season with salt, crushed black pepper, green chilies paste, Mix. Add Yoghurt with cashew nuts paste and Mix. Cover & cook for 15 minutes. Add Capsicum, Stir fry then Add Black & Green olives, Cottage Cheese Cubes and Cream Mix and Remove from flame, Dish out.

Wheat Flour Jaggery Bonda Sweet Bonda – Diwali Special

For this Diwali I made this Sweet Bonda which is simple and wonderful dessert and can be prepared easily on special occasions and whenever you want to have some sweet with jaggery.

My mom used to make them very regularly when we were kids as evening snacks and we used to enjoy them after coming back from school.

These are prepared by simple ingredients like Wheat Flour and Jaggery. Adding coconut, rice flour and milk gave a yummy flavor. If we want we can omit them and use water instead of milk. 


If we want crispiness to bondas we can use rice flour, if not we can avoid it. To get better shapes of bonda we can use a deep curved ladle or an icecream scoop to pour the batter into oil.

Ingredients:

Wheat flour – 1 cup
Jaggery grated – ½ cup
Sugar (optional) – 1 tsp
Dry Coconut grated (optional) – 2 tsp
Elachi Powder – a pinch
Milk – 5-6tsps
Water
Salt a pinch
Oil for deep frying



Preparation

  • In a wide bowl take wheat flour, add grated jaggery , milk , sugar, elachi powder, coconut, salt and mix well.
  • Add little water if required and mix well till the consistency of batter will be like vada batter.
  • Keep this mixture aside for 1-2 hrs.
  • Heat oil in a pan; pour the batter into it with the help of ladle.
  • Cook well on medium flame.
  • Fry bonda’s well till golden color and drain them to kitchen towel.
