Pizza Mushrooms

If you can find a little oven space, these are an easy appetizer to make and very tasty. You can use other pizza-type toppings instead of the pepperoni if you like; maybe stuffed olives, chopped ham or green peppers.

36 large mushrooms
45 minutes - 15 minutes prep time

Pizza Mushrooms
36 large button mushrooms
200 grams (1/2 pound) cheddar or mozzarella cheese
1 cup tomato sauce
1 teaspoon oregano
100 grams (1/4 pound) pepperoni


Clean the mushrooms, and remove the stems. Reserve the stems for some other use. Set the mushrooms on a baking tray, gills up. Preheat the oven to 350°F.

Grate the cheese and mix it with the tomato and oregano. Chop up the pepperoni and mix it in as well. Spoon this mixture into the mushroom caps. Bake for 30 minutes. Serve hot.

They will exude a lot of juice as they bake, so make sure the baking tray has edges to prevent it from running off the edge.

Jeenas Summer Pizza

This was really tasty for a light dinner. Pizza is nice anytime of the year but the peeled peppers really give this pizza its refreshing summer taste! It is easy and just delightful to eat. Enjoy :)



Strong White Flour (approx 2 cups)
Dried ready to use yeast(approx 1/2 sachet)
1/4 tsp Sugar
Pinch Salt
Mozzarella Cheese
Yellow Pepper/Capsicum (peeled sliced)
Red Pepper/Capsicum(peeled sliced)
Green Pepper/Capsicum(peeled sliced)
Onion (sliced)
Tomato Puree



Add your flour yeast and sugar into a bowl and mix well.



Add enough warm water to form a dough.



Knead your dough for a few minutes.




You should be left with a smooth dough.



Take a small piece.



Roll it out thin and round.


Place it onto a greased and floured tin.





Spread with some tomato puree.



Add your vegetables.



Add your cheese with a sprinkle of black pepper if desired.





Cook in a hot oven approx 200C for 10 minutes or until golden.

SANDRAS HOMEMADE PEPPERONI PIZZA and TWISTY BREADSTICKS

This is a traditional 
All-American version...

--(This recipe makes 2 medium pizzas, although we’ll just be making one, and using the other ½ of the dough to make breadsticks-See below)--

Sauce Prep. and
Baking Pizza: 35 minutes total

***Sauce:
1 tablespoon olive oil
¼ cup yellow onion, diced
¼ cup red bell pepper, diced
2 cloves garlic, minced
2 (14.5 oz. cans) Italian diced tomatoes, drained and chopped
Pinch of red pepper flakes
Pinch of kosher salt
Pinch of freshly ground pepper
½ teaspoon Italian herb seasoning blend
1 teaspoon honey

***Toppings:
¼ package of pepperoni slices
½ can of sliced olives
2 cups mozzarella cheese

--Garnish with fresh chopped basil

METHOD

Preheat oven to 475 degrees, and set rack to a low position in your oven. Prepare pizza pan by brushing it with olive oil, then sprinkling it with cornmeal, and set aside.

Roll out pizza dough into a round, slightly larger than pizza pan. Place rolled-out pizza dough onto pizza pan, and fold under edges to form a lip; brush all over with olive oil, and par-bake for 5 minutes, remove and set aside.



Meanwhile, heat a large skillet to medium-high head, and add the olive oil, onion and bell pepper, and saute until onions are translucent. Add the garlic and continue sautéing for 30 more seconds. Add the remaining ingredients, and bring to boiling point, and then reduce heat and let simmer for 15 to 20 minutes, until sauce reduces and thickens. Place the sauce on the par-baked pizza crust, and continue baking for 15 minutes, until crust and cheese are lightly golden.

BBQ Chicken Pizza

BBQ chicken pizza


Ingredients for pizza dough
  • Flour 2 cups
  • Salt ½ tsp
  • Sugar 1 tsp heaped
  • Instant yeast 1 ½ tsp
  • Egg 1
  • Oil 3 tbsp
Method
  • In a bowl add Flour 2 cups, Salt ½ tsp, Sugar 1 tsp heaped, Instant yeast 1 ½ tsp,Egg 1, Oil 3 tbsp, and knead with Luke warm water as required, form into a soft dough, knead well, spread on a well greased rectangular Swiss roll tray, prick well with fork, bake blind for 10 minutes on 200 degree C, remove, cool, spread with prepared sauce, filling and re-bake for 20 minutes until crisp.
Ingredients for filling
  • Chicken boneless thinly sliced 2 breasts
  • Salt ½ tsp
  • Black pepper ¼ tsp
  • Crushed red pepper ½ tsp
  • Ketchup 1 tbsp
  • BBQ sauce 2 tbsp
  • Garlic paste ½ tsp
  • Pizza sauce 4 tbsp
  • BBQ sauce 2 tbsp
  • Mushrooms sliced 4
  • Capsicum thinly sliced 1
  • Onion 1 sliced
  • Black olives 3 tbsp sliced
  • Mozzarella cheese grated 1 cup
  • Cheddar cheese grated ½ cup
  • Oregano leaves 1 tsp
Method for filling
  • Marinate chicken breast thinly sliced with salt, black pepper, crushed red pepper, ketchup, garlic paste and BBQ sauce, pan fry in 1 tbsp oil till done, mix together pizza sauce and BBQ sauce spread on the baked pizza crust, top with filling add both the cheese, oregano leaves 1 tsp, bake for 20 minutes till pizza crisps. cut into square pieces and serve.
