Panjeeri


Ingredients:
  • 1 kg semolina
  • 250 grams gond
  • 250 grams makhanay
  • ½ kg sugar
  • 2 cups clarified butter
  • 125 gm Melon seeds
  • 125 gm raisins
  • 125 gm coconut
  • 125 gm Pistachios
  • 125 gm Cashew nuts
  • 125 gm Almonds
Method:
  • Heat 2 cups of clarified butter and stir 1 kg semolina in it.Add 125 grams of cashew nuts and fry till light golden.Take it out and cool down and keep aside.Add ½ kg sugar and keep aside,Now heat the clarified butter and fry the maakhanay for 10 minutes.
  • Now crush half of the makhanas and leave half of it.Now heat the ½ cup ghee and sauté the gondh until crispy.Now crush it and mix with sooji, makhanay, melon seeds, raisins, coconut, pistachios and almonds.
